ORGANIC OLIVE OIL FROM OWN HARVEST
Did you know that in Almunia del Valle we produce our own organic olive oil? An extra virgin olive oil, organic, fruity, and with a deep green color. This process begins with the harvesting of the olive at its optimum state of maturity. With this, we achieve that our oil has a superior quality since, at the moment of harvesting, 3 parts of the olive is oil.
Transport to the oil mill for self-consumption takes place immediately after harvesting. In less than 24 hours, the olives pass from the tree to our table. Once there, they are discharged into the waiting hopper, where impurities such as the remains of leaves and branches are discarded. In addition to getting rid of impurities, the olives are washed to remove any residue attached to the skin. In this way, we avoid any alteration in our oil.
The olives, already cleaned and washed, go through a mill where they are crushed and a paste is formed that is subsequently beaten for almost an hour. This process is used to extract the oil from the olive cells and is carried out cold so that the oil can retain all its properties intact.
Then, the oil goes through a centrifuge where it is possible to separate the liquid from the solid. Once the oil is extracted, it goes through a decanter. Here, naturally, the smallest impurity particles are removed. From the decanter to the bottling plant, where they proceed to bottling and labeling.
This year, with the olives that we have collected from our farm, we have prepared a video to visually show you the art of creating "liquid gold". Organic extra virgin olive oil that we hope to share with all of you here, in La Almunia del Valle.
