La Almunia del Valle, a charming sustainable hotel, is an old Andalusian farmhouse. Traditional country house in a rural setting within Granada. Its greatest singularity is its particular interaction with the environment in which it is located. Placed in one of the most beautiful parts of the Sierra Nevada Natural Park. Its construction respects the environment and it is integrated into the landscape in a harmonious and discreet manner so as not to alter the balance that surrounds it.
The land was bought with the farmhouse already built. The first thing that called our attention was the respectful manner in which the construction was made. Bordering each tree or natural obstacle not to interfere with its development or growth, it adapted to the orography of the land and at the same time witnessed the entire evolution of the valley and the mountains that surround it.
Enjoy seeing without being seen
None of its previous owners had been linked to the tourism industry. The house is within a protected area of the Park. Modifications in structure and facilities are expensive and slow to program and execute. With this, the challenge of turning it, little by little, into a sustainable hotel is slow and sometimes too expensive. But this has been the main objective since the beginning. We have always worked with respect to the environment and in an ecological way. In La Almunia, we have centenary olive trees, holm oaks and native flora.
Gastronomically, La Almunia has always opted for a kitchen based on local products and in the case of animals, with respect and dignity towards life and its sacrifice. The native calf “Pajuna” of Sierra Nevada and the small goat of the Valley, are an example of this. It is a great effort for farmers to raise them due to low productivity, but it is rewarded with a high flavour in the product. For many decades, their high production costs were demotivating the investment in these products until almost their total disappearance. Nowadays, many farmers have taken the initiative again thanks to the supply and promotion by small family businesses that are committed to the sustainable development of our region.
In conclusion, La Almunia del Valle has always opted for respect, maintenance and care of our environment. We involve a whole community of local producers, we encourage the consumption of local products ... And, with the participation of all the staff and the help of our guests, we work every day with the aim of being a charming sustainable hotel.
